From our pastures and paddocks to our oceans and oenologists we glean the best for our tables from generations past to generations to come.

Stillwater too is reinventing itself from this historic mill it calls home at the Cataract Gorge, which provided water and flour for the mana of early colonial settlement, feeding many generations before. It has sustained the foodie tragics of the nation since 2000 and is now proud to announce the Stillwater SEVEN…..eat, drink and STAY.

Yes, we will offer the same caring, nurturing and professional service Stillwater is renown for all the way to the pillow plumping before you retire for the night. The SEVEN boutique rooms will be infused with the foodie experience Stillwater is known for. Hibernate in your waterfront den overlooking the Tamar River or sneak down in the early hours to see what is coming out of the ovens and chat with the chef about what is looking fabulous for breakfast. Indulge in our chef’s menu or just take your time sipping some of the local tipples and then pop in for a visit to meet their makers just up the river.

The rooms were created around bespoke and handmade, locally crafted but infused with international sophistication SEVEN continues to showcase Tasmanian talent. The architects and designers from Cumulus Studios have outdone themselves. Simon Ancher has created a bespoke range of furniture just for you to enjoy. Lentara Olive Grove created a range of toiletries and beauty products just for you using their top quality olive oil as the base for these luxurious products. Even the beds are local, made by AH Beard in Hobart to our dear friend Brett Torossi’s specifications…no ‘princess and the pea’ moments here, just like floating on a cloud. We have lured Tasmanian talent back to the State to head up the project, welcoming Chris McNally back to the team…now as a co-owner.

Renew, reuse, reduce, recycle…as we have ‘upcycled’ the building so we are going back to our roots to create a more sustainable model of accommodation. Free from plastics and the waste of the disposable generation we hope you like the touches we will be offering knowing we will be treading just a little more lightly on the planet.

Of course SEVEN as you would expect is all about the local food, the Stillwater team has been hard at work creating and curating the best of the local bounty for your own private pantry and bar…just in case you want to retreat to your own private cocoon…in culinary style of course!

The Tasmanian Tesla Traverse invites guests to tour the south, east and north of the state from the comfort and style of a Tesla provided by Tasmanian-owned Drive Car Hire. The package includes two nights each at Hobart’s The Tasman, Piermont Retreat on the east coast, and Launceston’s Stillwater Seven, as well as indulgent dinners and breakfasts along the way.
The Tasmanian Tesla Traverse starts at $6,640 for two people, between 1 May - 30 October 2023. Bookings are available upon request to any of the package partners from March 15,2023:

BOOKINGS
All accommodation and pre ordered extras must be fully paid for at the time of reservation by provision of credit card details.
A booking confirmation email must be obtained. If a booking confirmation email is not obtained, the booking is not confirmed.

By providing credit card details, guests warrant they have the authority to use the credit card and they authorise STILLWATER SEVEN to charge the cost of their booking(s) and pre ordered extras to that credit card.

Payment Policy

Cancellation Policy

CANCELLATION POLICY
In the event of a bookings cancellation, guests are entitled to a refund of their booking deposit UNLESS one of the following applies:
Where a booking is cancelled after 5pm 21 days prior to the arrival date, the booking will not be refunded. Exemptions may be applied due to extenuating circumstances this is at the discretion of the Stillwater Seven management.
As of the 1st January 2023 – We will no longer be offering credits for guests who test positive to COVID prior to arrival. We strongly suggest taking out the appropriate travel insurance cover to include accommodation. In saying that as always, we will work to try and sell your night(s)accommodation with us and if we can do that we will then the amount can be used as credit.
No refund will be granted where a booking is cancelled for a stay(s) between 23rd December and 5th January inclusive; or for the part of the booking which falls between these dates.
No refund will be granted in the event a guest does not arrive for their booking or cancels on the date of their booking and the credit card associated with that booking will also be charged for balance of the booking.
A cancellation confirmation email must be obtained. If a cancellation confirmation email is not received, the booking remains in effect.
